Greensense and Williams College Dining Services have a great relationship. In the last few years we've been working together to reduce the amount of waste it produces and to run in a more environmentally efficient manner which has proven to have substantial economic benefits as well. Here are some recent initiatives/accomplishments:
- Monthly Vegetarian Dinners with proceeds going to the Berkshire Food Project.
- Composting of napkins and food scraps. (Click here for more composting details.)
- Local produce from Berkshire County farmers.
- An Organic and Natural Foods Earth Day Feast (Thursday April 22nd at Mission Park.)
- WRAPS - a student run program that delivers left over food to local shelters (Click here for more WRAPS details.)
- The Eco Café - Initiated by Greensense in 2001; sells free trade coffee, organic juices, tea bread, tea and occasionally organic chocolate. The sugar is organic too! By September 2004, The Eco Café should be selling soy yogurt, bagels and fresh fruit.
- Discount at Goodrich and Eco-Café if you bring a reusable cup and free Grab and Go canvas bags.
Oh and for those of you vegetarians:
Each dining hall has a special fridge that holds soy and rice milk, vegetarian/vegan cheeses, vegan spreads, yogurts, cakes and various other vegetarian/vegan products. Grab and Go always has a vegan option available as well.
Future Projects:
The college has done much but there is still much room for improvement. Greensense is pushing to have the dining halls buy organic milk from Highland Farm, a local dairy, and continues to push for increased seasonal purchasing of produce from neighboring small farms.
