Vegan Baking

Ever wondered how the heck those crazy vegans eat without eggs, milk, butter, or cheese? What do they do about cookies, cakes, pies, and creme brulee? And do vegan baked goods really taste like cardboard with chocolate sauce? In this course, curious students will learn how to create vegan cookies, pies, muffins, tarts, custards and other delectable delights. They will learn what makes vegan baking both sublime and sucky. Most work will be in lab, but short seminars on the different (PETA and otherwise) philosophies on veganism will be included. At the end of the course, students will receive a cook-book of the recipes they have used to create edible art.
